Mexican Chorizo
Ingredients:
2 lbs ground pork (I used ground turkey for this batch and it was superb)
2 Tbsp paprika
2 Tbsp chili powder
2 tsp garlic, minced
2 tsp salt
1 tsp (freshly) ground black pepper
1/2 tsp dried oregano
1/4 tsp ground cloves
1/4 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp distilled white vinegar
2 Tbsp water
Directions:
Place pork, paprika, chili powder, garlic, salt, black pepper, oregano, cumin, cloves and coriander in a bowl. Using hands, combine well. Add water and vinegar and combine.
Place in airtight container and refrigerate at least 1 hour (overnight is better). Form into patties and use as desired (I fried and crumbled mine for the burritos).
Mexican Fried Potatoes
Ingredients:
3 large russet potatoes
3 Tbsp vegetable oil
1/2 medium onion, diced
2 1/2 tsp garlic, minced
2 tsp ground cumin
2 tsp chili powder
1 tsp ground oregano
1 tsp ground cayenne pepper
Salt and pepper to taste
Directions:
Poke holes in potato skins with fork and bake or microwave the whole potatos until just barely cooked through; Don't overcook. Remove and let cool a minute, chop into 1/2 inch cubes.
(Note: If you don't mind a little extra grease, double the oil and just cook the raw chopped potatoes in oil - no baking or microwaving. Begin adding onions and garlic when the potatoes are almost cooked.)
Over medium-high heat, warm the oil in a wok or frying pan. Add potatoes, onion and garlic. Saute, stirring occasionally for 2 to 3 minutes.
Add spices and continue sauteing until potatoes begin to turn a nice golden brown. Adjust salt and pepper to taste. Serve immediately.
I scrambled up some eggs, warmed some flour (I prefer wheat but couldn't find any) tortillas and made up burritos with the chorizo, potatoes, eggs, queso, sour cream, shredded cheese and salsa (my favorite is habanero). DELICIOUS!
PLEASE do yourselves a favor and, if nothing else, try the chorizo recipe. It's super easy and super delicious.
